WEEKLY SHARES:

Veggie Supplement

Weekly Share from Hepworth Farms; 22 distributions (13 for Vacationer Shares)

Need more than the basic box? Hepworth is only offering CSA boxes in one size this year, but we know some households simply need more veggies! That’s why we’re offering a Veggie Supplement: 2-6 additional vegetables each week that will not be boxed. (If you were a COTC member prior to the pandemic, this will look familiar to you! A volunteer will weigh out supplement shares and you will select the pile that appeals to you.)

Need A LOT more veggies? You can order as many Veggie Supplements as you like!

In June, we anticipate veggies like extra greens, radishes, and maybe potatoes. In July and August we may see veggies like zucchini, kale, cucumbers, peppers, and corn. In September and October, there may be tomatoes, eggplants, kale, and squash. By November, veggies will likely be things like kale, Brussels sprouts, turnips, and squash.

Fruit

Weekly Share from Hepworth Farms; 22 distributions (13 for Vacationer Shares)

Members will receive at least 3-4 different types of fruit averaging 6-7 pounds per distribution, slightly less on weeks that there are berries and more on weeks with pitted and stone fruit.

An amazing value! Hepworth grows a variety of fruits, including apples, apricots, blueberries, cherries, currants, gooseberries, grapes, nectarines, peaches, pears, plums, raspberries, rhubarb and strawberries.

All berries and melons are certified organic. Hepworth’s berries are grown without any sprays, organic or not. The rest of their fruit is grown using Integrated Pest Management (IPM). When using IPM, Hepworth sprays ONLY when and where necessary, using natural sprays.

If Mother Nature doesn't cooperate and early summer fruit becomes delayed a week, members will receive more in subsequent weeks to balance out.

Cheese

Weekly share from Calkins Creamery; 22 distributions (13 for Vacationer Shares)

Each week members receive one of our many delicious artisanal cow cheeses from Calkins Creamery. Typically members will choose between 2-3 different cheeses or flavors each week. Some of our members’ favorites are mozzarella, Cajun flavored cheese curds, and Horsekick Quark, a creamy soft cheese with horseradish!

Sizes vary from 1/3 - 2/3 pound, depending on the type of cheese, but even our single-member households have enjoyed having a weekly cheese share! If you have a large household or you frequently snack on cheese, consider getting two shares to enjoy more variety throughout your week.

Calkins Creamery’s raw milk cow cheeses are made from grass-fed Holstein milk. Besides raw milk, the only other foundational ingredients are vegetable rennet, culture herbs and spices, and salt.

Eggs - Brown - 1 Dozen

Weekly share from Campanelli Poultry Farm; 22 distributions (13 for Vacationer Shares)

One dozen farm-fresh brown eggs every week!

Eggs - Araucana - 1/2 Dozen

Weekly share; 22 distributions (13 for Vacationer Shares)

These amazing eggs are from pastured Araucana Hens that are supplemented with organic feed when needed.

Araucana hens are a breed that originated in South and Central America and lay eggs tinted from green to pink, sometimes called "easter eggs" because of their varied colors. They tend to have a richer flavor than the eggs of older hens, and often have darker, larger yolks as well-a sign of their higher nutrient value. At the farmer's markets around NYC, these eggs are snatched up by pastry chefs for their dark gold yolks.

Greek Yogurt (Flavored or Plain)

Weekly share from Bethel Creamery; 19 distributions (10 for Vacationer Shares)

Each week members receive one 5.3 oz. individual serving-size container of plain Greek yogurt, or flavored Greek yogurt (rotating between Maple and Vanilla Bean). The yogurts are made from A2 milk from Jersey cows plus pure maple syrup or vanilla beans, AND they’re Kosher! The unique Maple flavor is a favorite of many members, and is sweetened with only maple syrup!

Bethel's A2A2 Milk is from grass-fed Jersey cows that only produce A2 protein milk (without the peptides BCM7) as opposed to A1 protein. Milk with this special profile is better digested in the body, similar to the way goat or sheep milk is.

Cows are grass-fed and pasture-raised on farmland in Bethel, NY. In colder months, cows are fed with supplemental hay.

Many loyal customers say it's the best yogurt they’ve ever tasted! Milk is OU certified by Rabbi David Miller.

Please note, there will be no shares on the following weeks due to Jewish holidays: September 27, October 4, 11.

Milk (1/2 Gallon or Quart)(K)

Weekly share from Bethel Creamery; 19 distributions

Enjoy a half gallon OR quart of Kosher A2A2 Milk delivered each week in plastic containers.

What is A2A2 milk? A2A2 Milk is a genetically superior milk from what most of us here in the US experience. Bethel's A2A2 Milk is from grass-fed Jersey cows who only produce A2 protein milk (without the peptides BCM7) as opposed to A1 protein. Milk with this special profile is better digested in the body, similar to the way goat or sheep milk is. Those who are Lactose intolerant can now enjoy the awesome taste of cow's milk! But that's not the only reason to choose this milk, as studies show many health benefits from A2, BCM7 peptide-free milk. For more information please visit A2A2milk.com.

Milk is OU certified by Rabbi David Miller.

Please note, there will be no shares on the following weeks due to Jewish holidays: September 27, October 4, 11.

Milk - Chocolate (Quart)(K)

Weekly share from Bethel Creamery; 19 distributions (10 for Vacationer Shares)

Enjoy 1 quart of Chocolate A2A2 Milk delivered each week in plastic containers. The only ingredients are Whole A2A2 Milk, Organic Cane Sugar, Organic Cocoa Powder (processed with Alkali). AND it’s Kosher!

Kefir/Leben (Plain, Vanilla, or Chocolate)(NEW!)

Weekly share from Bethel Creamery; 19 distributions (10 for Vacationer Shares)

Each week member will receive one 6 oz. individual serving-size container of leben made from A2 milk from Jersey cows. AND it’s Kosher! Bethel's cows only produce A2 protein milk (without the peptides BCM7) as opposed to A1 protein. Milk with this special profile is better digested in the body, similar to the way goat or sheep milk is.

We call it Kefir, the farmers call it Leben, but they’re basically the same thing as both are the result of fermented milk. Kefir/Leben is traditionally prepared by letting milk ferment for over 24 hours, then churning and removing the butter.

Milk comes from cows that are 100% grass-fed and are pasture-raised on farmland in Bethel, NY. In colder months cows are fed supplemental hay.

Kefir is flying off the shelves at Bethel and we are fortunate to be able to offer some at the CSA!

Kefir is OU certified by Rabbi David Miller.

Please note, there will be no shares on the following weeks due to Jewish holidays: September 27, October 4, 11.
