Hello Chubby Bunny CSA of NYC,
The fields are glowing with row after row of transplants: Tomatoes, celery, celeriac, potatoes, sweet potatoes, lettuce mix, spinach, onions, garlic, chard, frisee, eggplants, melons, peppers, beans, corn...Rest assured, your farmers have been busy planting, hoeing, transplanting, watering, cultivating....All the while tending the pastured pigs, the pastured layers, the grassfed lambs and ewes, just a steady game of keeping everything alive and well.
Thanks to our two apprentices, Chris and Josh, we managed to weather my second bout of lymes disease, rainy cold weather, and financial distress. (We still have twenty or so shares to sell locally, and sixteen or so outstanding in NYC...) I've included a recent picture of Beatrice, our 11 month old daughter with this e-mail, as well as some pics of the hens...I'll try and get some pics from the field in the next e-mail. I'll be doing my best weekly to send a newsletter every week to keep you up to date with things at the farm and in the field...Please forgive any discrepancies between what I claim will be the share for the week and what you may actually find. Occasionally we'll have to switch our harvest at the last minute to better suite the situation in the field. (I'm usually pretty accurate predicting the share for the week, though, so it aughtn't happen too oft...
Spring's the time indulge in greens. My suggestion is to experiment not only with raw greens as salad, but
wilting your greens in the final stages of pasta boiling or sauteeing...We recommend cooking your spinach greens with butter to counteract the oxalic acid content. (Same with chard and beet greens.) For those with egg shares, this is the week of the omlette!
